Slow Cooker Poppy Seed Chicken

If you ever make a mistake in the kitchen, I hope this story will make you feel better.
We had gotten home from vacation. After a week of being on the go, this momma was ready to cook and have some good home cooked meals for my family.
I picked out all my recipes, went to the store to pick up all my ingredients, came home and got cooking! I had three crock pot recipes going and a strawberry pie…I felt like super-momma!
After the first hour, I turned it from high to low and set the timer for three hours. And went on about the business of cleaning up the kitchen, unpacking, laundry, etc.
At the end of my three hours, I took a look in the crock pot and discovered something quite unpleasant. It was cold. I knew my crock pot wasn't broke since it is brand new.
Hmmm…what could it be then? That is when I saw it. The white power cord…still wrapped around the handy dandy cord holder on the back of the crock pot. I. FORGOT. TO. PLUG. IT. IN.
Poppy Seed Chicken
I knew I wanted to make it again, and the fact that it is super easy to make didn't hurt any either. I made a quick dash to the store a couple of days later and had this ready to go in under 5 minutes!
I love the crackle crumble on top. Not only was it super yummy, it was a fun step that Ryder could help me on. He is becoming quite the little cook and loves helping me whenever he can.
- 5.5 lb boneless skinless chicken breasts
- 21.5 oz cream of chicken soup (2-10.75 oz cans)
- 1/2 cups milk
- 1 Tablespoons poppy seeds
- 36 round buttery crackers crushed
- 1/4 cups butter melted

Spray your slow cooker with cooking spray

Arrange your chicken breasts in the bottom of your slow cooker

Mix together your soup, milk and poppy seeds

Pour mixture over your chicken

Cover and cook on high for one hour

Switch to low and cook for another three hours

Just before serving, mix together your cracker crumbs and butter in a bowl until well combined and sprinkle evenly over chicken
Slow Cooker Recommendation
My new 9 x13 casserole slow cooker was PERFECT for this Poppy Seed Chicken. I am seriously loving the whole 9 x 13 design…brilliant! If you don't have one yet, then you will want to use at least a 5-6 quart round or oval crock because it is a lot of chicken!
